Carrot Coconut Soup Recipe

2 cups sliced carrots
2 tablespoon sliced ginger
4 medium cloves garlic
5 ounce coconut milk
1 teaspoon turmeric or curry powder
1 large onion
1 tablespoon + 3 cups bone broth
1 cup sweet potato
Salt and white pepper for taste
- Chop the onion and leave it for about 5 minutes to release its beneficial properties.
- In a pot heat 1 tablespoon broth. Saute the onion in the broth over medium heat for about 5 minutes, while stirring often.
- Add the ginger and garlic, while sauteing for one more minute.
- Add curry and turmeric and stir well with onions.
- Add the broth carrots and sweet potato. Simmer over high heat for about 15 minutes, until your vegetables become tender. Then add coconut milk.
- Blend in batches, but make sure your blender is not more than half full. Add salt and pepper for taste.
- Put the ingredients in soup pot and reheat.
